Vegan Chocolate Chip Cookies (Allergy-Friendly​​​)

Little miss Melody is growing so fast and is now a very chatty three year old. She is very vocal about what she wants and these days she is constantly asking for “mommy’s cookin” which implies that she would like to cook with mommy.

This past week she has been insisting that we make chocolate chip cookies and I think that it is due time that I shared the recipe that we use.

For those of you who don’t know Melody has food allergies which include dairy, eggs, and nuts (except almonds). You won’t find any of these common food allergins in this recipe. On the bright side, without these classic additions, these cookies end up being vegan and a great go-to recipe that most can enjoy.

Melody hasn’t started school yet but I imagine we will be making hundreds of these cookies for her friends and special events that we attend.

I will add that these cookies are not soy, almond, or gluten-free which I know that some try to avoid. If that is the case, alternatives can definitely be substituted in place of those ingredients.

Ok. Let’s get started.

First, start by gathering all the ingredients.

What I like to do is measure everything out so that it is good to go. This makes things especially easier when baking with a little one 🙂

You are going to need…

1 cup dairy-free butter (I use Earth Balance buttery sticks), 1/2 cup brown sugar, 1/2 cup white sugar, 1/4 cup plant-based milk (I use Silk unsweetened vanilla almond milk), 1 tsp vanilla extract, 2 1/2 cups all-purpose flour, 1 tsp baking soda, 1/2 tsp salt and 1 bag of dairy-free chocolate (I use
Enjoy Life semi-sweet mini chips).

Next, you want to preheat the oven to 350 degrees.

While your oven is preheating…

add the butter, sugar, vanilla, extract, and plant milk (I used almond milk but you can use any other plant milk, like soy milk for example) in a large mixing bowl or stand mixing bowl.

Mix all ingredients.

Next, slowly add the flour, baking soda, and salt to the mixing bowl and mix until well incorporated.

Melody’s Note: Make sure you scrape the sides!

After that, mix in the chocolate chips. Yay!

Once the chocolate chips are fully incorporated it should look something like this…

Now, scoop the cookie dough into 2 tbsp sized mounds and place them on a lined cookie sheet at least two inches apart.

Once your cookie dough is all ready to go…

place them on the middle rack in the oven…

and bake for 10-12 mins or until light golden brown.

Once your cookies are done remove them from the oven and let cool for 5-10 mins.

Then, transfer the cookies to a cooling rack while trying not to eat too many before they get there.

Once they are completely cooled….

who am I kidding?? I’ve burned my tongue on a number of hot cookies.

When ever you are ready…dig in and enjoy!

Ingredients

  • 1 cup dairy-free butter Earth Balance buttery sticks
  • 1/2 cup brown sugar
  • 1/2 cup white sugar

  • 1 tsp vanilla extract
  • 2 1/2 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 10 oz dairy-free chocolate chips Enjoy Life semi-sweet mini chips

Instructions

  • Preheat oven to 350 degrees.
  • In a large mixing bowl mix the butter, sugar, vanilla extract and plant milk together.
  • Add flour, baking soda and salt to mixing bowl and mix until evenly incorporated.
  • Add chocolate chips into the mixing bowl and mix until evenly incorporated.
  • Form dough into 2 tbsp mounds and place onto a lined cookie sheet at least two inches apart.
  • Place cookies in oven and bake for 10-12 mins or until they become light golden brown in color.
  • Remove cookies from the oven and let cool for 5-10 mins before transfering to a cooling rack to finish cooling.
  • Enjoy!!
